🇵🇷🍗My 5-ingredient Guava BBQ Wings are quick, easy, and full of Latin sabor –like los pinchos de Piñones! Try them out this game day or for your next get together!

🍗Guava BBQ Wings:

4 pounds chicken wings 
2 tablespoons adobo seasoning
1/4 cup olive oil
1 bottle (18 ounces) barbecue sauce
1 jar (13 ounces) guava jam

In large bowl, toss/rub wings with adobo and olive oil. Marinate, covered for 1 hour (up to 2 days).

Preheat oven to 400F. Space out wings on a parchment-lined sheet pan. Bake for 20 minutes. 

In medium bowl, add barbecue sauce and guava jam. Nuke in microwave for 30 seconds to 1 minute or until warm. Stir until well combined. 

When the wings are ready, drizzle them with 1 cup of the sauce. Toss them well to coat. Turn the oven to 450 and bake them for 15-20 minutes or until the glaze is sizzling and caramelized. Serve hot. 

Use extra sauce to simmer frozen meatballs, drizzle on pizza, or as a dipping sauce for frozen pigs in blankets, empanadillas/empanadas, queso frito, or sorullitos.

Leftover turkey Medianoche sandwich, but on brioche, because diaspora problems. Ever heard of these?🇨🇺

A Medianoche sandwich is a Cuban sandwich on Medianoche bread – soft, sweet, eggy rolls similar to brioche, challah, or sweet Hawaiian bread. 

I LOVE making these sandwiches with leftover roast meat. Usually, they’re made with roast pork (which is what we make in my house), but roast turkey is a great way to use Thanksgiving leftovers.

📖Here’s my non-recipe:

🧄Garlic butter spread (on the outside)
💛Mustard mayo spread (on the inside)
🧀 Swiss cheese slices (both sides)
🦃Leftover roast meat (pork, turkey, or chicken)
🥒Pickle slices
🐷 Sliced ham
🍟Potato sticks (or crushed chips)

You can make these on a pan (like me) or press them on a sandwich/panini press (or George Foreman grill).

5-Ingredient Coquito🇵🇷🥥

Recipe:
(Makes 2+ bottles)

✨1 can coconut milk
✨1 can evaporated milk
✨1 can sweetened condensed milk
✨1/2 can cream of coconut – NOT coconut cream!!
✨Flavor – here, you freestyle. I added cinnamon, vanilla, and a pinch of salt. You can add other spices, cocoa powder, citrus zest, nutella , pistachio…just have fun with it!

✨Optional: BOOZE! - I always add about 2 cups of Puerto Rican rum like rondelbarrilito and, sometimes, other liqueurs like frangelico , disaronno_official , kahlua , or baileysofficial . 

If you’re boozin’ it up, start with 1 cup, then add more, little by little, until you reach the sweet spot.😅

3️⃣ ingredients 
3️⃣ steps to SILKY SMOOTH:

✨1️⃣ START WITH ROOM TEMP, HEAVILY-SALTED WATER and bring to a gentle simmer. This promotes even cooking of the starches in the potatoes and prevents them from absorbing too much water.

✨2️⃣ While hot, PASS POTATOES THROUGH A FINE MESH STRAINER to break them down evenly without disturbing the structure of the starches. DO NOT use anything with a blade to break them down (ex. blender, food processor, etc.)– this turns them gummy.

✨3️⃣ Adding HOT MILK AND BUTTER to your HOT POTATOES will ensure they absorb these fats completely, yielding a fluffy, smooth, velvety consistency and delicious buttery flavor.

Serves 4-6
Ingredients:

3 pounds Yukon / gold potatoes🥔
2 cups Half & half🥛
1 stick butter🧈

Peel & large dice potatoes evenly. Place in a large pot with enough water to cover 1 inch over. Season your water liberally with salt until it tastes like the ocean.

Over medium heat, bring to a gentle simmer. Cook for 8-12 minutes or until the potatoes are fork tender. Drain the water completely. 

Heat your half & half and butter in a pot until the butter is melted and the milk is steaming. Season it with salt and whisk to combine. Keep hot. 

Into their same pot, pass the hot potatoes through a fine mesh strainer using a rubber spatula.

Whisk your hot milk & butter mixture gradually into the potatoes, incorporating completely between additions until you reach your desired thickness. 

Taste & adjust seasoning (with salt).

These Plantain Sticky Buns made me smile…☺️✨

…intently watching the plantains bubble away in their own buttery sauce 

…cascading caramel into the pan where the buns would eventually rest

…carefully spreading plantain sauce to cover the surface of the plushy dough

…removing the parchment paper off the warm buns to reveal the shiny, lacquered tops

…unraveling the sticky, pillowy layers and letting the soft, plush bread dissolve in my mouth

…savoring the sweet tropical plantain and warm spices from the filling in the buns and caramel glaze on top

This was a fun li’l weekend baking project that made my apartment smell like the holidays. They were a labor of love and truly tasted like it. I used smallorchids recipe from her new cookbook “Bodega Bakes,” which is filled with many other unique, whimsy, Latin-inspired recipes that just scream JOY.🤍

I picked my apples at ochsorchard and used their Mitsu variety apples. 

For the recipe, I referenced the pie master: emcdowell ‘s “Apple Crumb Pie” (a.k.a. Dutch Apple Pie), but I cheated with pre-made, frozen puff pastry dough as a crust. It checked all the boxes:

✅flaky crust
✅tender, juicy apples that retained a nice bite 
✅crispy, sweet, buttery oat topping

Kicking off the weekend right with one of the best brunches I’ve had in #NYC goldendinerny 🔥 

We ordered:

🥪Chicken katsu club sandwich with home fries
🥞Honey butter pancakes 
💥Korean fried chicken wings 

Everything was delicious, but the lemon zest on the pancakes was a unique touch. And those home fries (with the sandwich) were impossibly crispy and airy! They reminded me of Abuela’s #arañitas 🇵🇷(shredded plantain fritters). 🤤

This is a #pastel –a meaty dumpling made with with a starchy vegetable masa (in this case, cassava and taro root), wrapped in a banana leaf, and boiled. In Puerto Rico there’s an ongoing debate about serving them with/without ketchup.🌴🫔🇵🇷

In casa de Abuela🧓🏻, #tostones are a religion. They’re twice-fried, smashed green plantains. Most often, the plantains are from her yard. In this case, her neighbor brought some over from a surplus she had at her house.  She picked them minutes before Abuela did her magic on them. These turned out perfect because they’re “volaítos,” which means they puffed up, forming an air pocket that makes them crispy on the outside with a soft/starchy interior.

🍣 #TBT to last week and my first #omakase experience at shinzo_omakase . I loved being surprised by every course and the buildup of every bite start to finish. Service was informative, but friendly, and speedy, but not rushed. Did I mention it’s BYOB?! We brought sake and did not regret it. Ok, maybe I did the day after..😅🍶
